Tom is our food and sustainability specialist and is a board member of the GLA Food board, an active Sustain working party member and has completed a number of key projects with DEFRA PAS2050 for Carbon footprint reduction.

Tom supports our clients with ensuring our food sourcing is sustainable and also that our chef teams are informed as to our supply chain, energy usage and waste management techniques.  He also runs our carbon zapping management tool which measures menu footprints and identifies methods and cooking styles to help reduce our impact.
