Food sourcing and sustainability
Tom brings to life our sustainable campaign in a tangible and measurable way. His work has enabled us to source locally whilst reducing the carbon footprint for each of our clients. Tom started his career in agricultural management around the world, moving into food manufacturing, then ran his own organic deli and pioneered the local farm to plate challenge. He now sits as a board member for GLA London Food Board, a working party member with Sustain and has involvement in the Greenhouse Gas Protocol and DEFRA. Tom also works as a Big Lottery local food advisor and assessor and mentor to the newest campaign Sustaination.
